In Utah there are the Jordan Beetdiggers. Apparently the community used to be beetfarms.
The school I was at is now the Spartans, but apparently back in the day they were the Smelterites.

Coastal school we played when I was in high school in VA - Christ Church Fighting Seahorses.
Not many in SC - as somebody said mostly animals. We do have the Shamrocks which I kind of like - they're not lucky in terms of their football history though.

I used to coach at Mullins, Home of the Auctioneers. State newspaper had a contest to pick best high school mascot. I was teaching a current events class, so we sent in ballots everyday and won the contest. So it is officially the best mascot in the State of SC!
