We count players for the offense and defense. Anyone over the football is a 1/2 man (i.e., 0 tech) and the rest count as a full player. We balance up our numbers with what the offense has on either side of the ball unless we are playing a field call.

what about other axioms that apply to offense or defense?

you mean things like: "we will be in some type of a trips set vs 2 zone" ... "we must, by formation and/or play calls, get the defense into 3 zone"
that type of stuff???

A few from a defensive pespective:
We count just as dgs describes - so if you play a Split, expect Offenses to attack primarily Strongside - they believe they have 1/2 a man on you.
People get into Twins to: 1. Get you to move WLB & run in vacated area 2. Run strong vs a def that overadjusts or has a corner force on TE side 3. Throw combination patterns (curl/flat, etc.)
If you don't have one more def than the off has blockers at the POA, you could be in trouble - play an 8-man front on perceived "Run Downs.
If you don't have one more in covg than off has potential receivers, the you are playing MAN, not Zone.

We tend to mix our coverages and the offense often will shift or motion, as a result - we have a "cancel" call that can be made by the strong safety that puts us in cover three. It does not happen often but, occasionally we find ourselves confused and this has been a safe fix for us in an emergency situation.

Defensively our philosophy is to force the offense, by adjustments, into something they do not normally do from their sets. Take away the best and we take care of the rest. Offensively, shorten the game, move the sticks, and if we don't score, leave a 70 yd field for their offense. Hawke

This is from a Oneback 4 Wide Gun perspective:
-If there are 5 in the box we will run the ball first -If your corner is 9 yards or more off our outside receiver throw Hitch... automatic -If your nearest defender to our slot is more than 7 yards away throw Bubble Screen -If you have 4 in the undercoverage then we will horizontally stretch you with 5 in the u/c -if you have 2 deep we will horizontally stretch you with 3 deep -if you are in C0 we will run a Post until we beat you -If you pattern read then we will confuse your reads -If you are a man team we will make you run laterally across the field all night long -We will run option a given number of times no matter what to deter your blitz
These are the basic ones and are starting points....

In addition to the previously mentioned info, offensively we will see what style of players the opposition has. If the D front are hard charging, then we trap and draw. If your LB's are slow reading, then we attack down hill and with quick hitters. If the secondary is quick to give run support, then we p/a pass.
Overall, our goal is to find the/a weakness in the defense (whether it's a player or scheme or defending a formation or play) and attack the weakness. Sometimes it works and sometimes it doesn't.

we're a 50/50 2 back and 1 back team...our general rule going into any game is...
in 2 back---a lot of twins sets and pick on the flat/alley defender (iso or iso pass the the twins side) and counter midline to the TE side
in 1 back---throw as many hitches to the single receiver side as possible or roll-out to the multiple receiver side (throw in a little draw)

defensively, as the name implies....due to high octain offense, im a bit of a gambler on defense...see big splits, blitz em. see ace or empty blitz em, see deep shotgun, cover em. when i "cover em" i make sure to double cover the best guys, ....(now i do after getting my butt burned last year lol)...anyhow, most of game, we have 8-9 committed to run...want to stuff run, pile up sacks. its heaven or hell sometimes.

Count heads in the box; if there are six then run, if there are eight or more then throw, if there are seven then figure it out.
What you see pre-snap is not what you're going to get post snap. This is true for offense a well as defense.
The big play happens on the unordinary down.
All kicks of the ball involve a loss or gain of thirty yards on one play, because of this special teams is special.
Get a hat on a hat.
Don't throw if you're inside you're own twenty yard line.
Hit 'em where they ain't.
Get there firstest with the mostest.
Keep low and hit the line hard. (The new stuff is great, but I still like the oldies)
To be sound on defense: Force, stack, fill, chase/contain, snap turn and pursue, sink, late fill, alley fill, insurance fill. Everyone sprints to the ball carrier and gets a piece of him. Everyone makes a run/pass/ball call...even the guys on the sideline.
