Looking to visit a school or two for a spring practice. Who at the schools should I contact to see what dates are okay and to set it up? I’ve never been to one before and have no clue how to go about it.

Alot of schools will post their spring practice schedule online/twitter. Some do require that you call ahead.

A lot of colleges in our state will email their spring practice schedule to high school head coaches. If they don't, you can always contact them to get the schedule.

Most colleges welcome you to their practices but they do want you to contact them before coming. As said before contact the coach that recruits your area or if the school has a director of high school relations contact him. If neither, just call the football office and tell them what you want and they'll connect you to the right person.

Get online, figure out when they're holding spring ball and then call and ask if you can attend. Small colleges are usually pretty open to having H.S. coaches show up and take notes. Some bigger schools are accepting of it while others close the practice.
My alma mater (FCS school) was great about allowing us to come view spring and summer camp. They just asked that we keep our distance from the drills, observe and keep our traps shut. Their coaches were AWESOME about answering questions once practice was done and over. I sat down with their OL coach for two hours after one practice and he answered all of my questions. I learned more about coaching the OL in those two hours than I had in the previous two year's of researching combined.
