Does anyone know if there has been a book (s) written in detail about the history and evolution of offense and defense? I have googled this topic and the responses always take you to more player and team specific books. Thanks.
(I posed this question here because it is not a book review.)

Rex Ryan does a good job of explaining the evolution of the 46 in the opening pages of his book.
Google / Wikipedia "Clark Shaughnessy (sp?)" and you will pretty much get a basic Darwinian account of offensive evolution

Coach,
Homer Smith has a 17-volume series of manuals. One of them includes this topic. I highly recommend all of them.

I have a theroy on the evolution of defense as it pertains to the different levels of play.
High School - just get lined up correctly and fly around the ball College - Disquise coverge, stunt linemen, and fly around the ball Pro - put all 11 players at the LOS and bail out at the last second.
Just my opinon

What kc361 said: homersmith.net/?page_id=30You don't have to agree with everything the delphic Mr. Smith says to get great value from this book.
