Looking to do something a little different this year with double sessions I was thinking about one full practice, then a team lunch, meetings, film study and maybe even weight room.
What have some of you done to beat the monotony of doubles and get a great deal accomplished?

We don't make major changes. Some competitive things within practice keeps it interesting. However, we are installing something new each session, so there is no monotony.
One thing the kids seem to really like is when we go 1s vs. 1s situationally. Sometimes goal line, sometimes coming out, sometimes MOF, sometimes OT. It goes only for about 5-10 minutes, but gets pretty intense.

everybody on my team goes both ways so, we will usually go O or D in the morning, a lunch break and some down time and then we will do whichever one we didnt do in the morning

We have one long session from 3:00 PM till 7:00 PM instead of a split session. We have done this for the past 6 years and it works well for us. One reason we do this is many (most) of our young players don't drive and this helps us get everyone there for just one drop off and pick up. Our feeling is we get to spend a concentrated time with the team and we can focus on the segments we want and not worry about not having enough time.
We spend time on the field, in the weight room, and in the classroom. Some of our time is full gear and some of it is in shells. We'll have the #1's on the field and the #2's watching video and then switch. It has helped our coaches tremendously and we also feel it helps the kids by mixing the schedule up.
