We teach to engage and when they feel their man slipping to cut him. Helps us avoid the holding penelty because when you lose contact is when most people want to grab on and hold. Also helps keep our kids from missing, alot of kids want to run out and dive at their man. Our rule is if you can't step on his toes you can't cut him.

here's a simple, stupid really...lol, drill our we use with our receivers on blocking.
receiver in a stance, with db located 5 to 10 yards off (vary depth of db throughout drill). a cone is placed somewhere on the field. this cone represents where the ball carrier will be on a given play. the rec presses vertical on the "snap" of the ball and the db backpedals. db's eyes are on the coach - who has his hand up. when the coach drops his hand, the db punches and attacks the cone (i.e....db recognizes run and reacts to stop the ball carrier). the receiver must keep the db off the cone for a specified amount of time. (coach has stop watch). amount of time and location of cone should correspond to the "play" being called. vary the alignment of the db, vary the spot of the cone, vary the time you have the db backpedal, etc.
