Here are some small college ones that are rather different.
The Minot State University Beavers (Coach JD did some work here and I attended here.)
Jamestown College Jimmies
Both of these colleges are located in North Dakota.

Woodward Boomers doesn't have a lot of meaning to people out of their area. nor does the Beaver Dusters, both from OK.

Illinois is full of them. I just remebered the Argo High School Argonaughts and I believe a small southern Illinois school had the mascot Appleknockers. Although I don't think that school is around anymore.

Nebraska gets to claim the mighty Holdredge Dusters, who have a small purple tornado for a logo. We also have the Omaha-Benson Bunnies.
