So it is offseason, why not give it a shot. If you ever could teach Football as more than just a single class, but with the length of an associate degree, how would you elaborate the complete course?
Especially in this period with traditional schemes going "dead", probably they will be back in the future.

Look at it through a lens of more traditional classes
Science- Kinesiology and a study of the movements and mechanics required by the athletes to play the sport History- The evolution of the game itself (scheme wise). The sport as a reflection of society. The important historic figures that have changed the sport. English- Commonly used terms and which ones are correct (you could have a whole lesson differentiating pattern match v pattern read). Math- Analytics, how they help redefine the game at the highest level and are they of any use in HS.

You could add economics, statistics, technology, athletic training, sports law, advertising, media, sports psychology, ethics, communication, business management, administration, physiology, health, first aid, speech. There are definitely enough subjects to justify a major.

Do people actually make a living doing football? Yes. Many make a very good living. And not just head coaches.

You could also talk about history ((Like how American football wasn't around in 1862) or how Acronyms are used such as GFYS and then the kids could call themselves GRADs...
