Coaches pick 2 teams. Best kids end up split 50/50.
Anyone that's a dude is out after 1qtr or maybe 1.5 qtr. Play ball other than that

There’s never enough linemen so they have to play both sides until the OL coach calls off the game because his guys are gassed.

Split teams evenly. First and 2nd quarter are scrimmage. 3rd Q is starting D. 4th Q is starting O.

Inter-squad - four teams, each match up is something like twenty on offense and defense. Ideally we can schedule some teams that run similar looks to the teams we play but as of late we've been big guy on the block scrimmaging against teams smaller than us. We do a "joint practice" with another team every year which is a nice way of scrimmaging without scrimmaging.
Intra-squad we barely ever do. We will go live varsity against JV and varsity subs which is the best we can get. We have small numbers for our school size.

Get as many kids as much work as you can. Finish (4th quarter) with starting O Vs. starting D.

If you are 2 platooned you can keep your starters intact to play good v good by setting a score and making the offense come back (28 is good, 25 if you want to put more pressure on scoring and stopping TDs)

For the past two years we have divided into an offensive team and a defensive team due to missing so many players in spring sports. Its hard for us to get two fully functioning teams with so many players out.
We go 1 offense vs 1 defense, 1/2 offense vs 1/2 defense and 2/3 offense vs 2/3 defense. I used to hate the spring inter-squad game but doing it this way makes it much less painful.

We had better success cycling on backups than wholesale switching. So we’d dedicate propres of best v best but a lot of the time we’d try to not have all the starters or quasi-starters on the bench at once because it led to problems of people not knowing what they were doing and yet having nobody to turn to.
