...you only have 1 really good WB and the other guy is liability/non-threat carrying the ball.

I have coached some very bad teams, but I have never had linemen who couldn't pull. With the tight splits, they don't have far to go and all they have to do is turn inside and get in someone's way. Some of my pullers were reluctant to block after they pulled, but they can be coached to pull.
If you only have one good back, you can run some Stack I and some I wing. However, it doesn't take a great athlete to run the ball in the Double Wing. A kid might not be a threat to break the long one, but in a ball control offense, I will take a kid who can pound it in there for 3-5 yards.

...you don't have linemen who can pull? ...you only have 1 really good WB and the other guy is liability/non-threat carrying the ball. flip flop the wings and a te, pull and run the kids until they can. keep the stances narrow and splits foot to foot...its all of 3 steps that they have to pull. and of course I wing, stack I or direct snap (aka single wing with dw blocking) to get the stud the ball.

all linemen can pull if taught correctly you should see some of the piles i have dealt with

Pulling is easy- anyone can run 4-5 yards

We aren't all powerfull....but....
1) A good DW coach can take any lineman and teach him to pull so long as everyone else butts out about splits, stance, and distance from the ball. 85-90% of linemen can't pull "naturally" but the can with much practice, a buttload of conditioning, good coaching, and a system that is built to give them every possible pulling advantage.
2) with the back situation I would probably look at some I wing and Single wing sets. I've used it in the past when I had one back who was heads above the rest. This sounds like that type of situation. Also don't forget the FB and QB can run as well.
3) if that back is that bad put someone in who isn't a "liability" running the ball...even if they suck find someone who won't fumble. You can probably make up for the week back by running FB and QB counters and counter cutbacks. (I'm trying to keep terminology as general here as possible) Mabey look at all those spare "recievers" you have sitting on the sideline...one of them might do the trick.
