How far off the ball do you place your offensive linemen? I know when I was in the wing-t we wanted our OL as deep as possible. Other teams I have seen have their OL on the line. Does it always depend on scheme or is it preference?

I think it is more scheme than anything.

it is all about the scheme.... i have seen spread teams that have the OL as far back as possible.

We base our depth off the center's numbers. I tell my guards to even up their helmets with the center's numbers. Everyone else lines up with the guards. It gives a bow effect, but it works for us. If a tackle is beyond the guards with his helmet, I back him up just a bit. The center's helmet is ahead of everybody else's. We just make sure that everybody is on the line and not actually in the backfield.
If DL-men crowd the ball, I feel OL should back up a bit to get some power and movement out of their stance. Different strokes for different folkes.
