Yes, we all know people can get fired for anything, but the important thing is what will hold up in court. If he were to sue and win, you will probably see less firing for owning a dispensery/grow house. Not sure for coaches or teachers, but someone must have been fired for this and then sued their employer.

Sue for what? If it's an employment at will state, he'd have no grounds. People have no legal "right" to a job. There are laws protecting your employment for a number of reasons, but growing pot isn't one of those reasons. Brewing beer isn't either - you actually COULD be fired for that, but under most circumstances it would be pretty stupid to do so.
I used to do training sessions for companies where I taught managers how to handle disciplinary actions with employees. I would talk about some of the legal aspects, and one of my examples was that you technically can fire someone for wearing blue on a Tuesday, but it would be really stupid to do that. Except if you work with people who have a mental handicap/condition where blue is a trigger color for them. In other words, it's not just about the law, it's also about the circumstances that apply to your situation.
I think there have been some good examples listed in this thread of conduct that is technically legal but might be inconsistent with the culture or desired perception of a high school program. Owning a strip club, owning a bar, owning a sex shop (I actually know a guy who owns one of those, coaches youth basketball in town, LOL. The shop is in another town so not many know about it.) Nothing illegal about any of it, but you could still be fired for it.
