We do the three team scrimmage thing at the team camp we go to in the summer. The way it works there is, each team rotates on a predetermined number of plays, maybe (10 Offense - 10 defense - out for 10)or what ever you decide. We never keep score but evryone sure knows who was dominate.

No, no, no... that's not the way to do it...
You put one team on defense, and the other two teams take each of the two sidelines...
And for 6 or more plays, the two teams alternate at offense while the one team plays defense... After the agreed upon 6 plays, all teams rotate clockwise... a new team becomes the defense and the other two team alternate on offense.
Well... that's how I've seen it done... keeps everyone involved, and no down time.

O - 10 plays and drive, D - 10 plays and drive, out - 10 plays is the way I've always seen it done and have done it.
