We're a team with 30 players on the roster, and most of them play on both sides of the ball. Does anyone have similar experiences and how to organize practice?

When we were in this situation we had an Offensive practice 1 day per week, a defensive practice 1 day per week and the other two days were split in half.
The best of the rest were always our scout team players.

Seems to be no other way. But we have only two days on field to practice. So it need to be planned to perfection.

If you have enough coaches what we have done in the past is:
Position coaches:
QB's/RB's; WR's; OLine on offense - we were option so QB/RB were always involved in stuff together DB's; LB's; DLine of defense - our strong safeties would alternate between DB's and LB's depending on what we are doing that day/week.
We had about 50 kids JV/Varsity. JV guys would do offensive individual/group and varsity guys would do defensive individual/group. Then you flip them. Only tough thing is getting JV team time since you need some of those guys for scout team O/D for varsity stuff. When we'd go varsity special teams we'd make sure all special teams guys were older so the JV guys did team O/D during that time with a couple of coaches.

We play our guys a way and a half...meaning we try not to start anyone on both sides of the ball. So we practice both sides all four days, however we have an offensive focus and defensive focus day. I do not like missing a day working on game prep during the week.
Monday Specials, Indy O, Install O, Team O, Indy D, Install D, Team D
Tuesday Specials, Tackle circuit, Indy D, Team D, Indy O, Group O 1, Group O 2, Team O
Wedn opposite Tuesday
Thursday is run through

When you have that few of players we try to steal time whenever possible. What I mean by that is I always try to find extra time for O and D line. Get them off of special teams whenever possible and have them spend that time working on extra technique. Aggressive lines are confident lines. You can hide a lot of scheme things with good lines.
