Coaching at a tiny rural school. Will have roughly 25 guys out (not bad for 8 man) and was contemplating going all offense on Tuesday all defense on Wednesday, then both on Thursday. Any thoughts? I see validity in concentrating on a specific skill/scheme during a single practice, but there's another part of me that wants to rep both o and d on the same day. For those that have been in a similar situation where you have a bunch of 2 way players, what have you found to work best?

We do something very similar. We do our install and game plan on Monday. Tuesday we have a 30 minute block for offense. After Special Teams the rest is defense. On Wednesday we have a 30 minute block for defense. After Special Teams, the rest is offense. Thursday is our walkthrough.

I was just at a larger school who plays 11 man, but with a similar roster size. We did both offense and defense Mon-Wed, with Thursday as a quick pregame walk through.
Looking at it now, I think that wasn't optimal and offensive and defensive emphasis days may be the way to go with a roster like this, but I wouldn't totally do just one or the other. Some skills just take too many reps.
If I were back in a position like this, I'd do a 30 min offensive period on The defensive day to work on throwing the ball (throwing and catching is best done daily, IMO) and some Indy, then do specials and then a full. 60-90 min defensive practice. The next day it would be vice versa: 30 min for tackling and defensive Indy, then a full offensive practice.
What do you plan to do with Monday?

We do 11 man football, but have very similar roster size... About 31 this year 9-12th. Our practice during the year is as follows:
Mon -film, workout, special teams review, defense formation recognition, offense wrinkle install/overview of opponents defense.
Tues - Defense all day until the last 10min then we do goalline offense for 10 min.
Wed - Offense all day until the last 10min then we do goalline defense for 10min.
Thurs - walk through
Fri - gameday

Mondays are our jv game days, and most of our games on Saturdays, so we have 4 days to get ready for the next opponent. I'm leaning towards making Tuesday defensive emphasis, Wednesday offensive emphasis, Thursday combine o and d, Friday pre game practice. I do like having the first 30 minutes as an individual of the opposite emphasis (offensive indo on Tuesday), but we will probably do offense every day since we're going to be a heavy option team. Look up some of the info BLB has posted about his practice plans. He runs SBV at a small school and does the alternating days with success, which is what got me thinking there's something to it. That's actually what I based my response on earlier, If I'm ever at a small school as HC, I'll run something along those lines.
