I don't think any day is all that much more special than the others. I recommend checking the schedule of speakers/presenters, see what you want to attend the most, and let that drive your decision.

When I used to attend it was always Sunday and Monday was the important days to attend....but this was for reasons to go and network...if that is what you are talking about then you need to go at the beginning of the convention because all the coaches will be there then.

Last year, they started a High School Coaches Academy which is almost all day Sunday. It covered a lot from X's and O's to Program Development, etc. That Academy led right into the evening Buzz Sessions (Positional topics). On Monday morning they have more High School General Sessions, which again the topics ranged.
I have attended each of the last five conventions, and it really seems the AFCA is trying to do more each year to cater to the high school coaches as well as the college guys. I feel the AFCA has done a great job bringing successful high school coaches to speak on the same topics many of us deal with everyday.
Long story short, My advice would be Sunday and Monday. (Cutcliffe and Saban are speaking in the General Session Monday afternoon also.)
