We've got 62 kids on the roster. I might could cull 8 or so more if I was a real hardass on a couple things, but that's still a lotta kids. Had to revamp our approach to practice to make sure we get our 2 deep reps for game prep and keep the rest busy so we don't have 30+ kids standing around for an hour.
Maybe we need to run more next summer...

Not an option. We're a school team in a conference with other counties around here. Don't really think we'll split off a second team based on one year's roster size anomaly.

Very dumb idea to run kids off or to "cut" kids at the youth level. You need to send and retain as many players as possible to the high school level.

I am going to evaluate our eligibility/attendance requirements tho, I don't want to just throw the doors open and everybody gets to show up whenever they want and be on the team.

Maybe we need to run more next summer... thats great to have that many kids! but you really really really should split into 2 teams.... i have 35 on my squad and i feel like thats to much... my comfortable number is 28-30. (5 coaches...makes a 1/6 coach/player ratio.)

Maybe you could coach them as a unit and just have the, scheduled separately?

I coached on freshmen team that had numbers like that. We split between two even units of 30 and platooned.

I actually find it easier to run an efficient practice with numbers like that...assuming you have a full coaching staff.
It shouldn't be a problem for position work if your coaches find ways to get multiple players going at once to maximize reps.
For team periods, try having two scout teams alternating. This should reduce the amount of time the scout O or D spends in the huddle and it will translate to more reps for your starters.
For Offense or Defense vs. air, have 2 units going at once.
