I am taking over as Camp Director for our school's youth football camp...
It is a 4 hour camp with kids k-8...
I am looking for any and all ideas...
We typically have a dozen or so of our high school players that help at the camp also...

I have found the key being having "lesson plans" for the players so they know exactly what to coach at their stations. We focus ours on blocking, tackling, and ball handling since those are the skills that ALL players should know to some extent.
The key is remembering to make the material developmentally appropriate for your athletes. This means considering the size of ball used, terminology, and using a simple to complex teaching method.
That should give you some initial items to consider. Let me know if you are looking for more details.
