We are locked into the following practice schedule:
Practice #1 8am-10am Break 30 min Practice #2 10:30-12:30
Should players eat something in between? PB&J sandwich?

Of course they should eat, you want them focused on the task at hand, not food!

Coach, with practices that close together, you can't do much better than Turkey subs on whole wheat, 6 inch, mustard instead of mayo, skip the cheese. Don't want anything difficult to digest such as dairy. The whole wheat will add some complex carbs without spiking their insulin and the turkey will be lean enough to not be a problem digesting. I would stick with water to drink rather than a sports drink, although there is a product we used to use called carbo-crush which was an electrolyte drink with complex carbohydrates added. I do not think it is available any longer, but it was great and effective.
If you have any problems with cramping, have pedialyte available for them to sip throughout the day.
