Not really on topic, but I must advise. If you have a horse-related mascot( Mustang, etc.) please be careful with the positioning of the animal and the tunnel. I've seen an unfortunate design that had the tunnel placed anatomically correct. The image of seeing a team run through a Horse **** is quite hysterical.

I agree that scoring first is key. I have a couple of thoughts on the opening of the game/half when in terrible conditions.
If the field isn't already decimated, take the ball first if you believe you can score. Try to get a score in before it looks like a monster truck rally.
If you have the choice after half and the field is destroyed, consider kicking off again. You can mud plop a sky kick, and if you can make a stop you will most likely get the ball back on the plus end of the field. This would also work to make them punt the ball from deep in their territory with a wet muddy ball. Those are opportunities for cheap points. Negative to this idea is that if they drive and score or run it back you look like you're an idiot who kicked off twice.

I was at a school that switched to it, along with several other schools in our school district. A lot of schools ditched it after the first season or even earlier. I think a lot of people were looking for a Hudl alternative and tried it.
Pros
It's cheaper than hudl. At the time they were providing the automated camera(not sure if they still do that)
Cons
Everything else.
The biggest ones were the difficulty in making and sharing highlights, and film exchange. If everyone switched it would probably be ok but the process wasn't great.
Mobile apps were not as good.

Not sure how it is in the rest of the country but in VA we are allowed to wear helmets during 7v7. Some tournaments wear them some don't...we were at a 7v7 today where the helmets were mandatory but a couple of teams showed up w/o them forcing us to play w/o our helmets for which we have never practiced.. Why would anyone choose not to wear a helmets if they could? I prefer to use helmets in 7on7 for the protection aspect, in addition to the practice of tracking the ball through a face mask and etc. The only pro I've heard regarding not wearing helmets during 7on7 is that guys tend to be more aggressive about hitting each other when their helmets on. So maybe you can dial back the aggressiveness when you go without. Not necessarily my opinion but an opinion I've heard discussed. My real issue with this is Post is that it seems more and more common to "punish" the people who follow instructions and do as they instructed. You have practiced in your helmets and showed up with them as the rules stated. Then you have to change on the day of competition to enable the guys who couldn't read the rules or decided to ignore them.
