How do you calculate conversion % when the defense jumps offsides to convert a first down?
For example, does it count toward your 3rd down conversion % in the box score?

Yes. The offense still converted on 3rd down.

So it counts as an attempt?
For instance, say the defense were to jump offsides on the opening series on 3&4, you would be 1 for 1 on 3rd down (100%)?

Defensively I would count it as a conversion because the defense jumped offsides. I don't know what offenses would typically count that as.

It will give you false information, unless the called play was a "freeze".
Otherwise, It will tell you that a play was a successful 3rd down conversion when the ball wasn't even snapped. If you operate under the idea that you can dial that up in a game because your "odds" said to do that, you might get a surprise.

Statistically it counts as FD via penalty and a conversion. But when I tag in HUDL instead of ODK I use S and result penalty so I don’t get it in filter.

If you gave them a hard count or a freeze type thing, then you definitely count it.
But, if they just did so without you really trying to draw them, then no.

in terms of official stats, the 3rd down doesn't exist because the play never happened
