I had 7 last year but let three go because too many chiefs and not enough indians. Now we are at 4 and I feel like not enough.
What does everybody else have?

We have 5 coaches and then 2 that go with 10th/9th grade when they play. So we end up with 7 on gamedays and most days of the week.

This will depend on your size of school and program a bit, obviously, but we're a school of around 625 and have around 70 players in the program 9-12. We actually practice all together and then the freshmen break off separate for scrimmaging/team/etc. We have 5 coaches for varsity--this includes the HC--and then two coaches for freshman. We play JV games, but all sophomores are considered varsity.

We have 6 varsity and 3 freshmen coaches. We had about 100 kids 9-12. The varsity coaches are broken into two groups...position groups and varsity JV groups. The position groups are O and D. The OL coach is the assistant to the DL coach and then flip it. The LB coach is the assistant to the RB coach and then flip it. The DB coach is the assistant to the WR coach and flip it. QB coach is on his own so he can run scout O.
Three coaches HC, OC and DC don't coach at JV games. JV coaches are OC, DC and special teams coordinator at those games.
We have had volunteers fill in on some of those positions, had 3 very good volunteers last year...all with DII playing and coaching experience.

I started 2 years ago with 9 total for 3 programs and have slowly added coaches to fill needs and hopefully reach our goal of 2 platooning (at least for coaches). Now I have 16... 8 for varsity including myself, 4 for JV, and 3 for Freshmen. And I have 1 that is part time for JV/Freshmen.
I try not to be a jerk but sometimes I have to just to put them back in line. Luckily, most of them are guys I've known and worked with for years.

Coop of 350- 7 coaches. We don't break up classes so we all practice together. Nice to have help, but a lot of dead weight. Love to trim the fat, but politics make that hard to do. I think 4 or 5 would be ideal.

This was last year. We've lost a couple of coaches and not all are paid. Needless to say we are in the middle of a shuffle needing 3 OL coaches, 2 DB coaches, and several MS coaches Varsity/JV - we combined them HC/DC/LB LB DL S CB LB/S$/S/CB/ST gopher
OC/RB QB WR OL
Frosh - they are separate, but we all interact together and they help out on Friday, and we help on Thursdays HC/OC/QB RB OL WR
DB DL LB
right at 1800 in the school

I was HC at six schools in our state.
At each we had three paid Varsity positions (including mine). At one school we were allowed to split a salary to have a fourth Varsity coach.

11 Total.
The HC acts as his own OC. Myself as DC I do not Coach a Position.
All our Coaches have a Primary Position and a assisting Position
DL - Helps OL during Indy Time Usually they Split OT's and TE's, OC and OG's
LB - Helps RB's
Safeties - Helps with WR's
Corners - Helps with QB's.
Kicking Coach... Oh don't get me Started !
When we go Group and Team everyone Coaches their Positions for both the Team and the Scout Team
Our JV's play either on Sat Mornings or Mondays. All those Asst go, Head Coaches Decision.
We also have 4 Freshmen Coaches and 3 7th Grade Coaches. First year with 7th Grade Team. Next Year we will have a 7th and 8th Grade Team if numbers so dictate.
D 1 In State Enrollment in HS is at 730 now and dropping ! Ouch ! All Boys

Division 5 school (enrollment a little less than 500). We run a Wing-T offense and 50 defense. We have around 50 kids in our program grades 9-12. Our JV and Varsity will practice together for individual periods then break off. JV plays on Thursday nights, Varsity on Friday. Anyone with a * is a paid coach
Varsity Staff: Head Coach / O-Line (me) * O-Line / Special Teams * Running Backs / Defensive Line * Receivers / Defensive Backs * Fullbacks / Scout Team Coordinator Outside Linebackers / Special Teams / Strength and Conditioning Coordinator Quarterbacks / Defensive Coordinator (Linebackers )
JV Staff Head Coach / Offensive Coordinator * O-Line / D-Line / Def. Coordinator * QB's / Linebackers / Special Teams
So a total of 6 paid coaches with another 4 volunteer coaches (one of which is our Strength & Conditioning Coordinator) plus a volunteer "Academic Coordinator" who organizes & monitors our study hall, serves as an additional contact for faculty (I am not in the building yet) and helps me keep track of grades. I would have used a paid stipend on this guy if he wanted it because I think it is that critical of a position. We are VERY fortunate that we have some quality coaches who are willing to volunteer. These are guys that love coaching, do it for the right reasons, and know they might miss a day here and there so they would rather be honest and not take up a stipend. I am also VERY VERY lucky that our Defensive Coordinator / QB coach is technically a "volunteer". He is also the A.D. so the district prevents him from taking a stipend (don't get me started). We are going to try to find a way to take care of him anyway because he is my right hand guy and puts in just as much time as me on top of his AD duties.. This is my first Head Coach position, and I have found that putting together a quality staff you can trust is one of the more difficult things to do. It is critical but I am glad I took my time with it, and relied on the advice of my mentors and coaches on the board.

Going through the posts, it seems that 1 coach for every 10 FB players sound about right.
That would confirm the magic number of 75 players DCOhio posted somewhere, required for two platooning (which would require at least 8 coaches). So for small schools with small rosters, 4 coaches would make sense as well.
I'm in Europe, practice attendance of around 40 players, 5 coaches.

This past season JV practiced with varsity on a limited basis. But this season coming up, they will be with us permanently as I'm hoping we can slowly move towards 2 platooning at that level as well.

Our program has 5 stipends to hand out for assistant coaches. This is at a 3A school with approximately a 715 enrollment. We will have anywhere from 60-70 kids in the program 9-12. I have the ability to split the stipends as needed. Currently, I should have 9-10 paid assistants next year and likely 2-3 additional volunteers.
