In season here is our schedule. (Most guys have football last block both days) there are a few that have a weight lifting class another block one of the days if their schedule doesn't work out.
In season: Monday: Offensive Skill Lift while OL watches Friday's film and goes over install stuff for the upcoming week, then flip it halfway through the block.
Tuesday: Defensive Secondary lift while DL/LB's watch film and do install stuff for the upcoming week, then flip it again.
Wednesday: Full team light agility/flex workout first half. Full team practice film 2nd half. Thursday: Offensive skill/OL separate practice film first half then Secondary/DL and LB's separate practice film second half. (They get a solid 25 min break in between, no chance they could watch an hour and a half straight of film)
Thursday: a little chalk talk/full team review of practice film AND opponent film - defensive priority
Friday: Watch opponent film - defensive priority
After the season we give them a full week to week-and-a-half off. Then we start the off season lifting program. Monday, Tuesday, Thursday, and half the class Friday are workout days. Wednesday is usually a free day. We mix it up some too, that's not a hard and fast schedule. We throw a week of wrestling in there - they get all jacked up for that one. We play soccer and other communist sports that everybody sucks at for conditioning work too. Just breaks the monotony.
We have a few successful alumni that have come back to talk. And also have had team discussions/readings of articles on leadership/teamwork and all of that stuff.
Once spring practice starts it mirrors about like we would do during the season, and we give them the last 2 full weeks of school off in class (they play basketball or just hang out to be honest- probably not good to advertise that) before summer workouts.

A lot will depend on the type of schedule your school uses. Now: Traditional 7 period day. Our class is in the spring semester last period. MTThF in the cold months Wt lifting W is skill work outside (or best weather day of the week) MWF in the warmer months Wt lifting TTh skill work Occasional film work, motivational speaker, SAT prep, etc... as needed. We have a special bus that runs for athletics, so kids would usually stay past the bell to finish their lifting session/skill work Those that can get in PE in the fall also, will do their in season lift and watch film twice a week. This fall class is primarily for freshmen to work on developing lifting techniques and routines.
In my last stop: 4x4 block schedule Fall PE was all freshmen, when ever we could make the schedule work. Lift 3 days a week, 1-2 days of film work, other days again for study hall, speakers, etc..... Spring PE class was for all football players, same basic schedule as above, but not need to stay after the bell.

What are you doing to keep things fresh and fun...thinking there is value to lifting (we have great weight-lifting classes already) but want to make this unique and attractive to the kids...don't want burn the kids out....thoughts..

Every year at the end of the season we did a Basketball tournament, set it up with a draft, followed by "practices" in which different fundamentals had to be mastered (i.e. the pick and roll, box out session, ect.) kids loved it and it coincided with the start of the NBA/College Hoop. After the first semester ended we did a dodgeball tournament this wasn't as long but it was great. In march, at the conclusion of wrestling we did a bunch of strength challenges including some light wrestling in the wrestling room. Then in the spring we always do a softball tournament. Some great memories from this stuff!

Yes it is...trying to keep it different enough that the kids are always interested..if it is weights and plays all the time I think it loses something... A bunch of the games you are mentioning we do in the summer...could be cool in the class...keep it up
Thinking of a day of Recruiting...kids make highlights from HUDL...fill-out college football questionnaires...try to get something like that going too.

At the past school I was at we did a lot of agilities and conditioning, with an emphasis in core training.
I was in charge of the core training...
we did battle ropes with Fire Hoses since we could not afford the actual battle ropes.
Small tire throws using a trunk twist action.
Small tire overhead squats
and Big Tire Sledge Hammer work
Kids really enjoy my station as opposed to just the basic stuff like 4 corner drill, Pro Agility, and starts and stances.
