Not sure how many coaches you have but we split practice in half.
1st half Varsity players with Defensive coaches 9th graders with Offensive coaches
2nd half 9th grades with Defensive coaches Varsity with Offensive coaches

We split practice. Is there a benefit that you see to having d on one day and o on another?

Give some specifics on your defensive practice schedule along with your offensive.
Blackknight Time frame- How long do you practice?
Tell me about the following:
Indy Drills
Pass skel
Team
Special Teams
FBcoachG---Like the split practice especially working with the young kids. Seems to really build the program throughout the year and what they(9th) are taught. What size school are you at? How many coaches are on your staff?

We have 8 coaches, the thought was that the HC didn't want to just send 2 guys down with the 9th graders, we wanted them to get the same coaching as the varsity kids. We have roughly 60 kids 10-12 and 30ish 9th graders. When we are on 9th grade offense there are 3 coaches and the HC helps with the varsity D, then when we are varsity O the HC stays with the varsity and works with the OL. We could probably get away with 3 coaches per side but it kind of depends on the scheme you run.

We do both every day. No real emphasis. Time split pretty evenly each day.

We do both everyday and are on the field for 2.5 hrs. We rotate what we work first. Some days it is offense, other days it is defense. It's not a 100% equal split - offense will get a little more time than will defense.

About 2.5 hours Tuesday and Wed. Warmups, Varsity O, JV D w/ Indy, some different group periods (inside run, 7 on 7, blitz period etc). Two special teams in the middle, then switch, varsity D, JV O. Conditioning. Mondays we are only on the field about 1.5 hrs. Review mistakes, put in game plan, etc... then watch film. Thursdays are about 1.5 hour walk through and special teams. Then JV game

At one time, we had more offense on Monday and more defense on Tuesday. Now we pretty muhc break it up every day. If you email me at dogfbcoach@gmail.com I will be glad to send you a load of practice schedules----just the simple breakdowns. I'm not saying we have the answers, but it's worked for us and I've shared them with a lot of coaches who switched from one-way players to two-way players and have adopted these in some form.

How did you handle skill and insert periods?
We had issues this year where one of our LB's was one of our OT as well. So one day he got LB skill the next day he got OL skill and same with insert. This was not ideal by any means what so ever.
I am almost coming to the conclusion that our 2 way players must have extensive experience playing the game (many of our kids have only played 1 or 2 years before).
Any suggestions on how to better manage this?

Do you guys do much on Saturday? In the past we have given the kids Saturday and Sunday off following a game. We use Mondays as film, conditioning and weights but I sometimes feel that we'd be better off to run them on Saturdays and get their soreness out.

We do the following:
Monday = Varsity Defense & Sophomore Offense .....Punt Return for Varsity built into defensive practice .....Punt for Soph built into offensive practice Tuesday = Varsity Offense & Sophomore Defense .....Same as Monday for Punt/Return Wednesday = 45 Minutes Each of Off/Def Review & Special Teams Practice .....Kickoff, Kickoff Return, Hands, Onside, PAT/FG Thursday = Soph/JV Games .....90% of our kids play a game Thursday so it is really just a "practice that counts as a record" against the stuff we will see friday
I have never gotten much from a kid trying to learn an offensive gameplan and defensive gameplan on the same day... to much info IMO.
